Add some cavalry(suggested: dragoon)
My standard corps:
4-5 regular
2 dragoon
1 engineer
4-5 artillery
You may replace some regular when you can afford guard

Super luck
I have tried my best to improve relation with the great powers before war erupts so the great powers (especially UK/France/Austria/Russia) don't attack me (or only 1 great power I am not sure)
Also use the desert relief of the Levant to make the enemy bleed to death by attrition.
Attack them when they are weakened enough
But the most important is: the Ottoman AI has gone insane and don't attack me profoundly because they are also engaged in the Opium War. So I just push them out and concentrate my armies to rush to Ankara/Istanbul to enforce a white peace
